Mergelsø Pomme Avec
A cider-based drink made from apples and fruit. The recipe is simple: 50% apples, 50% fruit, and 0% chemicals. The apples and fruit are fermented together cold and slowly. After pressing, the fermentation continues until an organic spirit is added to the wine. Then, it is aged in barrels. Approximately one year after harvest, the Pomme Avec is ready to enjoy. It has both acidity from the apples and sweetness from the fruit, along with a mild alcohol content.
We produce four varieties: Pomme Avec with Plums, Pomme Avec with Mirabelles, Pomme Avec with Raspberries, and Pomme Avec Tutti Frutti (rhubarb, gooseberries, blackcurrants, blackberries, redcurrants, raspberries).
Pomme Avec is best served chilled and pairs well with desserts, cheese, or as an after-dinner drink. Alcohol content: 21%.
POMME AVEC – MIRABELLER
Our Pomme Avec with Mirabelles is a unique blend crafted from a variety of mirabelles: small and large, sweet and tart, yellow, red, or black. The mirabelles are gently crushed, skins and stones included, and fermented alongside apple must. This process extracts the maximum flavor and character from the fruit. After pressing, the must undergoes a slow, low-temperature fermentation. Organic spirit is added to achieve the desired alcohol content, followed by maturation in oak barrels until bottling.

Our Pomme Avec with Victoria plums is crafted using fully ripe plums, gently crushed to release their juices. The plums, including their skins and stones, are fermented alongside apple must to extract the maximum flavor. After pressing, the must undergoes a slow, cool fermentation. Organic spirit is added to achieve the desired alcohol content, followed by maturation in oak barrels until bottling.
